Simple recipes with our summer vegetables 🍅

For us, summer time means vegetable time! The warm days, the long nights and a lot of delicious summer vegetables. If this beautiful season had a flavor, it would be, among others, the fruity taste of our field tomatoes. 

The vegetable plants, which we planted in our fields in spring, grow rapidly on their climbing supports and develop delicious fruits full of flavor. So this year we can harvest tomatoes, cucumbers, peppers, eggplants, zucchini and radishes. We would like to share this joy with you and send you sunny greetings from our fields in the form of mixed vegetable boxes, or pure tomato boxes. These products can be used to create many different recipes. Be it a quick and easy salad, stuffed peppers or pickled eggplant for the grill.

The vegetables were grown outside on the filed according to ecological guidelines. In our fields we actively promote biodiversity and ecological balance. So you will find islands of biodiversity between our fields and all kinds of plants and herbs are also welcome between the rows of trees.

A typical meal from Spain: Pan con Tomate (bread with tomato). It is as simple as it is delicious.

You will need: bread, garlic, tomatoes, extra virgin olive oil and salt.

Steps:

  1. Toast the bread to your liking and rub it with garlic 
  2. Drizzle extra virgin olive oil on the bread
  3. Grate the tomatoes with a grater 
  4. Spread the tomato puree on the bread
  5. A pinch of sea salt 

Now you have a quick breakfast or a snack for in-between.

Another very simple but special recipe is the Zucchini Carpaccio.

You will need: our delicious zucchinis, your favorite pesto, extra virgin olive oil, salt.

Steps:

  1. Cut the zucchinis into thin slices, e.g. with a peeler. 
  2. Roll up the slices into small rolls 
  3. Drizzle your favorite pesto and extra virgin olive oil over them 
  4. A pinch of sea salt 

This carpaccio is great as a side dish for a barbecue or as a creative appetizer.
