Glass bottle 750ml can of our hand-picked early harvest EVOO. This olive oil is produced by a two-phase system using cold extraction, without water consumption; and it is made from olives of the Manzanilla Villalonga variety.
Texture and taste
The oil has an intensely fruity aroma similar to that of fresh green olives themselves, with notes of apple, almonds, and ripe tomato. Upon tasting the oil there are flavours of red pepper and fig, as well as hints of green pepper and a trace of freshly mown grass. It has a slightly bitter taste, and is of medium spice. EVOO is especially suitable to be used raw in recipes such as salads, and its composition makes it a particularly good choice for sauces and dressings of any kind. It can even be used in recipes for certain desserts!

Harvest 2025
The harvest began on October 14, 2025, during daytime hours, in order not to disturb the overnight resting of the birds that seek shelter in our olive groves—mainly thrushes and partridges, which have adopted our grove as their place of rest and protection. For the harvest, we used a buggy with a front clamp and battery-powered Pellenc electric shakers, ensuring that the olives suffer no damage before reaching the mill. This type of harvesting is carried out to guarantee that there is no variation in the physico-chemical or organoleptic quality of the olives, ensuring that they arrive at the mill intact and undamaged before extraction in the mill. A total of 14 people were involved in the harvest, processing around 70,000 kg of olives to produce this high-end, aromatically expressive extra virgin olive oil. The maturity index was 1.5 out of 7, meaning before the onset of veraison, with a very low yield of around 13%, which required approximately 6 kg of olives for each 750 ml bottle. Transport to the mill was carried out immediately, with no more than 5 hours passing between harvesting and processing, thereby avoiding heating of the fruit and its deterioration. This EVOO has a green fruitiness with an intensity of 7 out of 9, and a bitterness and pungency index of 5 out of 9, indicating that it is a high-quality EVOO with strong organoleptic intensity. The medium-high level of pungency and bitterness indicates a high phenolic content, as well as an intense green color due to its high chlorophyll content, which means special care must be taken in its storage, avoiding direct exposure to light.

Shelf Life
Please store the olive oil in a cool place. After being opened it should be consumed within one year.
